This comprehensive programme will prepare you for leadership roles and owning your own business. You will learn financial, operational and management skills which are essential for a hospitality business to thrive. We start with an introduction to New Zealand's legal framework and go on to modules on basic accounting, how to cost out and budget menus and wine and beverage lists. You will develop a keen understanding of hospitality business costs.
Human Resource Management and Employment law form an important part of programme including understanding recent compliance changes, how interview, select, train and appraise new staff members. You will have the experience of planning and organising team rosters for a busy bar and restaurant. A module on hospitality leadership will include how to create effective, high-performing teams in a busy and dynamic environment.
Hospitality & Event Management
You will gain first-hand experience planning, organising and supervising a series of NZSFW events. You will learn how to segment and analyse at the planning stages of an event and to then determine the staffing requirements and technical skills and go on break down the programme and the costs to the client.
Effective budgeting is a cornerstone of any business. You will learn how to read accounts, cost menus, set sales and production targets specific to the hospitality sector through practical event experience.
You will learn how to confidently use a computer in a business environment and study Microsoft Excel to create templates, write reports, create budgets, manage stock control and food and beverage costs. The goal is to build key computer literacy skills that will benefit the students in all careers especially as they move to supervisory and management positions.
You study WSET Award in Wines and Spirits Level 2. This highly regarded international qualification is recognised as an important pathway to senior roles in hospitality.
This intensive programme explores the wines & spirits of the world. You will learn about the major wine growing regions from around the world, understand their grape varieties and styles of wine as well as interpret their labels. This course also covers how to apply the principles of food and wine matching, give basic guidance on appropriate selection, storage and service of wines and spirits and understand the principles of wine tasting and evaluation.
The course programme covers:
- How wine is made and other factors influencing the style of wine
- Key white and black grape varieties
- Important wine producing regions of the world
- Sparkling wines
- Sweet wines and fortified wines
- Spirits and liqueurs
During the programme, you will have three weeks work placement to enable you to gain more practical hands-on experience in leading Auckland restaurants and hotels. During this time you will build on your FOH Front of House skills and gain confidence as a hospitality professional. Many students are offered part time work at these businesses following their work experience module.
Graduates will be able to work in FOH positions as waiters, bartenders, junior sommelier, duty managers and supervisors in restaurants, bars, catering businesses, clubs, luxury resorts and hotels, superyachts. NZSFW graduates, because of the highly practical nature of this course, are attractive employees to prospective employers.
